This is our process.
The Beans.
Our coffee beans are fully washed, pulped, and fermented for 18 hours (this is where those 15 rivers come in handy).
The Drying.
The beans are carefully sun-dried by hand and then we start the milling process.
The Roasting.
As soon as you make your order, it’s roasted to your taste, we pack it, and send it right to your door.

Medium Roast.
The Medium Roast of our Café Especial
Despite giving the coffee a little less body, it highlights more its acidity and the fruity notes flavor.
Arabica type, with a score equal to or greater than 84.5 points, and selected grain size in 15 to 18 meshes.
Our medium roast is balanced between a silky body and sweet acidity with a high accent.
It is unique to the Sevilla region.
Prepare filtered or with an Italian machine.

Medium High Roast.

Arabica type, with a score of 83 to 84 points, and selected grain size in 14 mesh.
With less acidity, and with highlighted sweet caramel notes.
